Letting the chopped garlic stand for 10-15 min before cooking allows the compound to be fully developed before heat inactivating the enzymes.

The more you damage garlic's cell walls the more sulfide is formed with more pungent flavor.

Cook's Tip:-
Crushed cloves taste harsher while sliced and coarsely chopped ones taste milder. Mashing minced garlic with a pinch of coarse salt helps tame the harsh flavor.

Bittergourd - Health Benefits - Part 2

Bittergourd
Also known as Balsam pear, Karela, this herb has attracted considerable interest for its ability to regulate blood sugar. There are atleast three different groups of constituents in bitter melon or bitter squash also referring bittergourd. These include a mixture of steroidal saponins known as charatin, insulin like peptides and alkaloids. It is still unclear which of these is most effective or if all three work together.

Rich in iron, bittermelon has twice the beta carotene of broccoli, twice the calcium of spinach, twice the potassium of bananas and contains Vitamin C & B1, B2, B3 and good dietary fibre. It is believed to be good for liver and has been proven by western scientists to contain insulin and inhibit HIV-1 infection.

Radishes are available in white, red, purple or black, long cylindrical or round in shape. They are eaten raw, cooked or pickled. Oil is extracted from the seeds of radish. Capsicums are beautifully colored fruits available in green, red, and yellow colours. They are mild-flavoured and used as vegetables. They are known to be sweet pepppers and are named differently according to where it comes from. This past February, when the American Journal of Clinical Nutrition published a paper that listed foods most likely to prevent colon cancer, what stood out Broccoli.
